A (Fatty Acid) Parable*?

(*Parable comes from the Latin word parabola, from Greek parabolḗ, meaning "comparison."1)

In the mouth of two or three witnesses:
Cis Fat vs. Trans Fat
“Unsaturated fats can be either cis fats or trans fats. While cis fats are beneficial and can promote good cholesterol, trans fats are considered harmful to cardiovascular health, especially those trans fats which come from unnatural sources (e.g., hydrogenated oils in processed foods). In November 2013, the U.S. Food and Drug Administration (FDA) said it is requiring the food industry to completely phase out artificial trans fats.
“Note: Though this comparison refers to cis and trans "fats," it is more technically correct to call these "fatty acids."”2

“Hydrogenation of fat products is used in the food industry to extend their shelf life. Trans fats are the result of partial hydrogenation of unsaturated fat. Trans fats increase low-density lipoprotein cholesterol and decrease high-density lipoprotein cholesterol, thus increasing the risk of cardiovascular disease. Canadians have one of the highest dietary intake of trans fat in the world. Health Canada has made recommendations to decrease the trans fat intake of Canadians. Physicians should be able to provide their patients with information on trans fats and their deleterious effects on health.”3

“FAs are divided into saturated fatty acids (SFAs) and UFAs. UFAs mean that the chain contains at least one carbon-carbon double bond. If the two hydrogen atoms combined with two carbon atoms on the double bond are on the same side of the carbon chain, they are called cis UFAs. On the contrary, they are trans UFAs. Almost all natural UFAs are cis FAs, mainly found in vegetable oils. Trans FAs are found in hydrogenated vegetable oils, refined vegetable oils, and adipose tissue and milk of ruminants.
“Excessive intake of trans FAs may cause blood clots, affect the health of the fetus, reduce the secretion of male hormones, reduce memory, cause obesity and cause coronary heart disease. Therefore, it is necessary to develop fast and accurate quantitative methods to monitor the content of cis/trans FAs in plants and foods.”4
